Ingredients:  
One potato for each person eating
Salt and pepper to taste
Olive oil cooking spray or olive oil
Optional: Spices of choice (taco spice, chili powder, parsley flakes, Parmesan cheese)

Directions:
Directions:
Slice potatoes in large wedges ( I use an apple slicer.)
Spray wedges with olive oil cooking spray.
Add salt and pepper to taste.
Optional: Put spices in large plastic bag with potato wedges. Shake until covered.
Put on cookie sheet that has also been sprayed with olive oil.
Cook at 425º until tender. (about 25 minutes.)
I usually broil on high for a few minutes if the potatoes need more browning.
