1/2 tsp dried thyme
1/2 tsp dried sage
1/4 tsp salt
1/4 tsp pepper
4- 4 oz boneless pork loin chops
1 T. olive oil
1T. butter
1/4 C. seedless raspberry jam
2 T. orange juice
2 T. white wine vinegar (I never have this on hand I use 1T. red wine vinegar and 1T. cider vinegar)

Preheat oven to 200ºF. In a small bowl combine thyme, sage, salt, and pepper. Rub over chops. Melt butter and olive oil in non stick skillet. Cook chops for 4-5 minutes on each side. Remove from pan keep warm in oven. In the skillet combine jam, OJ, and vinegar. Bring to boil. Cook 2-3 minutes until sauce is reduced to desired consistency, it will thicken more as it cools. Spoon sauce onto serving plate, place chop on top.
