4 Chicken Breasts
2- 10oz. chopped (frozen) Broccoli (or fresh asparagus)
2 Cans of Cream of Chicken Soup (Healthy-Choice)
1 Cup Hellmann's Mayonnaise
1 Cup Milk
2 Cup Shredded Cheddar Cheese
Bread Crumbs

Par-boil Chicken Breast until tender, let cool - slice and place the chicken breast in a 9 X 12 (greased) baking dish. While the chicken is pre-cooking, place the two frozen boxes of broccoli in microwave and cook for 5-6 minutes, then drain excess liquid from broccoli.
Once broccoli is cooked, sprinkle broccoli over the pre-cooked chicken.
Mix together: 2 Cans of Cream of Chicken Soup, 1 Cup Mayo, 1 Cup Milk.
Pour this mixture over the chicken and broccoli and then sprinkle the bread crumbs.

Place in preheated over of 350 degree for 45-60 minutes. You can serve over cooked rice.

Sometimes I switch out the broccoli for asparagus. I've always used the 10 oz. box of frozen broccoli, but have used fresh asparagus as well. For a creamier taste you can also add 1 cup of sour cream!
