1 1/2 tsp canola Oil
1 1/2 T sweet paprika
1 T ground cumin
1 1/2 tsp fine sea salt
1 1/4 tsp pepper
5 Cloves garlic chopped
2 1/2 T white wine vinegar
2 Large sweet onions thickly sliced
1 Whole chicken cut into serving pieces (Or 2-3 chicken breasts)
2 Red peppers cored, seeded, and cut into chunks

Preheat oven º425. oil large roasint pan and set aside. Combine paprika, cumin, salt, pepper, garlic, vinegar, and oil in small bowl to make a paste. place vegetables in pan and drizzle past over. stir to coat. Then add the chicken- flippng/moving around in pan till coated too. Roast in oven for 45 minutes. Remove from oven and rest x5 minutes. Serve over rice.
