1 cup cracked wheat (bulgur)
2 (-3) cups boiling water

1 1/2 cup fresh parsley, finely chopped
1/2 cup fresh mint, finely chopped
1/2 cup onions minced (or green onions, chopped)
1 small cucumber, chopped
3 firm tomatoes, chopped
1 1/4 tsp. salt
1/4 tsp. pepper
1/4 cup oil (olive)
1/4 cup lemon juice

Directions:
Leave the bulgur to soak in 2-3 cups of boiling water for at least 30 minutes. (Leaving the bulgur a bit firm allows it to absorb the lemon juice without getting too soggy.)

Meanwhile, chop and mix the remainder of the ingredients. Drain the wheat thoroughly in a large sieve. Toss with other ingredients, cover and chill. Serve with Romaine lettuce. Add lentil soup, pita bread and hummus for a light meal.
