Chicken:
3 or 4 chicken breasts - skinless work just fine
fresh parsley - probably 2 tablespoons
chicken bouillon cubes
salt and pepper to taste

Noodles:
4 eggs
1/2 teaspoon salt
Approximately 2 cups flour

Boil chicken breasts in a large pot with snipped fresh parsley and 3-4 chicken bouillon cubes, until cooked through.
Remove from water and cut into bite size pieces or shred - return to water.

Noodles:
*Probably best to make these a day ahead so they can dry
Whip eggs until light and fluffy
Add salt
Add flour to eggs until dough is sticky
On a well floured surface roll dough to thickness desired and cut into noodles. Dry the noodles before adding to chicken

Simmer noodles and chicken uncovered for 3-4 hours. Make sure you have enough water to cover noodles.

I usually make the dough for noodles and cut with a floured pizza cutter laying each noodle over a cookie cooling rack. Also, have heated the oven to 200 - turned it off - and put noodles in oven on the cooling rack to dry them faster. We like them a little fatter -- this is a family favorite! Also, have made double batches of noodles and frozen 1/2 after drying for future use. Plastic bread bags work great for this.
