20 cups diced tomatoes (about 30 Roma)
2 1/2 green onion (diced)
7 Serrano Chiles (finely chopped with seeds)
5-7 Jalapeņo peppers (finely diced w/seeds...more for hotter flavor)
2 heads fresh cilantro (chopped)
3 Tablespoons salt
Juice of 3 limes

Combine ingred. put in jars and can in water-bath to store.
This will make 12 or 13 pints.
