Ingredients: Cupcakes: 19 OZ pkg Bob’s Red Mill GF vanilla cake mix 2 Cups grated apples with all the apple juice (I used Honey Crisp Apples-unpeeled) 3 large whole eggs (at room temperature) ½ Cup Vegetable or Canola oil ½ tsp vanilla 1 tsp Cinnamon (if you like Cinnamon add ½ tsp) ¼ tsp cloves ¼ tsp ginger ¼ tsp nutmeg Butter Cream Cheese Lemon Frosting: 1 - 8oz pkg of cream cheese softened at room temperature 2 Tbsp. butter at room temperature 1 tsp vanilla 1/2 of a small Fresh Lemon (juice ONLY) Powdered sugar

Directions:Cupcakes: Follow mixing and baking instructions on back of Bob’s Red Mill GF vanilla cake mix. NOTE: Apples provide a lot of moisture. Recipe calls for ½ cup water at room temperature. Use judgment when adding water based on consistency of cake mixture. Butter Cream Cheese Lemon Frosting: Cream cream cheese and butter together for about 3 minutes until smooth texture. Add vanilla and lemon juice (use less then 1/2 of fresh lemon juice if you want a milder lemon taste). Begin adding powdered sugar (small amounts at a time) as you continue to mix ingredients. Continue adding small amounts of powdered sugar until the mixture is creamy yet somewhat stiff. NOTE: Once you get the Butter and Cream Cheese mixed you can pretty much add any flavoring you like or none at all. Either way you will need the powdered sugar to give the mixture a frosting texture. |
