About ¾ lb. sourdough or other country type bread
¼ cup butter- softened
¾ to 1 lb. fresh mozzarella cheese about 3.5” wide
16 fresh rosemary sprigs
Salt and pepper

Cut bread crosswise into 12 slices about ½ inch thick. Lightly spread both sides with butter. Cut cheese across the widest dimension into ¼ inch thick slices.
Layer 3 breast slices with enough cheese between slices to cover bread. Cut stack into quarters and push cut end of rosemary through the stack. Repeat. Consider salting and peppering and using toothpicks to help support it.
Oil BBQ grill on high heat. Lay skewered bread and cheese on grill. Cook, turning often, until bread is lightly toasted 2-5 minutes. Serve hot.
