2 1/2 lbs cream cheese
2 egg yolks
1 3/4 c. granulated sugar
1/4 c. heavy cream
3 Tbsp. all purpose flour
1/2 tsp each grated lemon and orange rind.
Pecan Nut Crust
2 c. finely chopped pecans
2 1/2 Tbsp granulated sugar
2 1/2 butter softened or melted

Pecan Crust
1. Blend pecans, sugar, and butter. Preheat oven to 400
2. Press mixture into bottom and partly up the side of a 10inch springform pan.
3. Bake 6 minutes and cool before filling.
Cheese cake
1. In a large mixing bowl, beat cream cheese until light and fluffy.
2. Mix in sugar and flour, continue beating until smooth.
3. Add grated rinds, yolks and whole eggs one at a time. beating after each until mixture is thoroughly blended.
4. Stir in heavy cream and mix only briefly.
5. Pour mixture into prepared crust and bake for 15 minutes@ 475ºF.
6. Reduce oven temp to 200ºF. for another hour.
7. When cake is done, turn oven off and allow cake to cool slowly for an additional hour. Remove cake from oven and cool to room temperature.
