Poor Man's Cake Recipe

1 C raisins
1 C water
1/2 C butter/soft
1 C sugar
1 t of each: cinnamon, nutmeg, cloves, baking soda, vanilla
1/2 t salt
1 egg
2 C flour
3/4 C nuts, chopped (optional)

Directions:
Directions:
1. In a large saucepan, boil together raisins & water until the liquid is about 1/2 C (remove from heat).

2. Stir in butter & sugar - let it cool.

3. Grease/flour a cookie sheet with sides.

4. To the raisin mixture, add: cinnamon, nutmeg, cloves, baking soda, & vanilla.

5. Stir in salt & egg.

6. Gradually stir in flour.

7. Stir in nuts/optional (traditionally--Mom used walnuts)

8. Spread in prepared pan.

9. Bake at 350 degrees, 20 minutes. Cool cake on rack.

10. For icing, combine a some powdered sugar & a little milk to a thin/pourable consistency. Pour over top of cake. Yum!
