1/2 c. olive oil
1/4 c. cider vinegar
1 tsp. salt
1/2 tsp. oregano
1/2 tsp. mustard powder
1 small clove garlic (opt. )
4 medium potatoes, cooked, peeled, and cubed
1 c. celery, chopped into 1/4- inch pieces
1 medium onion, finely chopped
1 c. carrots, grated
1 green pepper, slivered
1/4 tsp. hot pepper, seeded finely chopped
2 Tbsp. fresh parsley, minced
2 scallions, finely chopped

Directions:
Directions:
1. Blend the oil, vinegar,salt, oregano, mustard powder, and garlic until smooth.
2. Pour over hot potatoes,marinate for at least 1 hour or until potatoes are cool.
3. Add the rest of the vegetables and the seasonings to the marinated potatoes.
4. Refrigerate for about 2 hours, and serve on a bed of lettuce.
