1 can (15oz.) canellini beans or Great Northern beans, drained and rinsed
1 T roasted garlic
1 T white balsamic vinegar
2 tsp. plus 1 T olive oil
1 T fresh thyme leaves, chopped
Salt and fresh ground pepper, to taste

Directions:
Directions:
To roast the garlic, preheat oven to 375ºF. Cut off the top of a whole garlic head to expose the cloves. Place the head, cut side up in an oven proof dish or pan. Drizzle 2 tsp. olive oil over head, cover pan with foil and bake 45 min or until garlic is soft when pierced with a knife. Squeeze from root end of garlic to pop out cloves.

Combine beans, garlic, vinegar and 1 T oil in a food processor until smooth. Sitr in thyme and season with salt and pepper.
