3 Baked Potatoes (medium sized)
1-1/2 Cups All-Purpose Flour
1 Egg Yolk (beaten)
2 tsp. Salt

Directions:
Directions:
Bake potatoes, separate the pulp from the skin, then mash lightly with a fork. Place on a flat, clean surface. Create a ring around potato with the flour. Add egg to the center and sprinkle in salt.

Mix with hands until dough comes together. Knead lightly until a nice ball can be formed. Separate dough into 5 balls. Flour the work surface and roll balls into ropes about as big around as a nickel. Cut rope into pieces about an inch wide.

To cook, place about half the batch in lightly salted boiling water (garlic powder adds nice flavor when added to the water). They are done when they rise to the surface, about 8 minutes.

To serve as a side dish, add a pat of butter and fresh grated Parmesan cheese. Can also be eaten as a main dish with red sauce or as a replacement for pasta in soups.


Tips:
Gnocchi can be parboiled and frozen for later use. Add to boiling water for about 4 minutes. Remove from water, drain and place on a greased cookie sheet. Place sheet in freezer. When gnocchi are frozen solid, store in a zip top bag.

Gnocchi (pronounced NO-kees) are a family tradition in my husband’s Italian family. They bring back memories of Grandma’s house. This fun recipe is a new family tradition for our family because it is just as fun to make as it is to eat. The kids will LOVE making this dish. Don’t be intimidated by the kneading and rolling. I’ve never messed them up and I just throw them together.
