1 large red pepper, diced
1 medium red onion, diced
1 large English cucumber, diced
1 can black beans- washed and drained
1 can corn or fresh corn
1 cup quinoa, cooked for 20 minutes and cooled
Sauce:
1 bunch cilantro
1/4 cup (or more) olive oil.
4-5 limes
1 Tbsp oregano
1.5 Tbsp cumin

Directions:
Directions:
After cooling and cooling the quinoa, add chopped vegetables.
Sauce:
1 bunch cilantro wash and pat dry. In a blender put cilantro leaves and 1/4 cup (or more) olive oil. Squeeze about 4-5 limes, 1.5 Tbs cumin, 1 Tbsp oregano. Blend together. Add olive oil and lime as needed, Mix with the quinoa and vegetables. Refrigerate.
