2 c sugar
2 c flour
1 t baking powder
1 t baking soda
1/4 c nuts (optional)
1/2 c coconut (optional)
2 t cinnamon
1 t salt
3 c shredded carrots
1 c oil
4 eggs
1 16 oz can crushed pineapple drained

Directions:
Directions:
sift together:sugar, flour, soda, baking powder, cinnamon and salt. Add oil, carrots, eggs, pineapple, nuts and coconut.Mix well. Pour into greased and floured 13x9 pan and bake for 50-60 minutes at 325. Your may use 2 9" layer pans and bake only 25-30 minutes. Cool and frost with cream cheese frosting.

Cream Cheese Frosting
Mix together throroughly: 1 3 oz pkg of cream cheese, 1/4 c of butter (softened), 2 c confectioners sugar, 1 t vanilla .

I got this recipe when I worked at the Coffee Grind coffee shop in college. I have modified it a bit over the years. This cake took 3rd place in the Tennessee State Fair
