Crust
1 1/3 c. graham cracker crumbs (8 whole graham crackers, crushed)
1/3 c. dark brown sugar
½ tsp cinnamon
1/3 c. unsalted butter, melted

Cheese Filling
12 oz cream cheese (1 ½ packages)
2 eggs
½ c. sugar
½ tsp vanilla

Topping
1 c. sour cream
Blue food coloring (optional)
Blueberries (optional)

Directions:
Directions:
1. Preheat oven to 350°.
2. Grease a 9” glass pie dish.
3. Place graham crackers in zip-loc plastic bag; using a rolling pin, crush crackers until they are reduced to fine crumbs.
4. In a small bowl, mix the crumbs with the brown sugar, cinnamon, and melted butter until blended and crumbly.
5. Using a large spoon, press the crumb mixture onto the bottom and sides of the greased pie dish.
6. In a mixing bowl, beat the cream cheese, eggs, sugar, and vanilla together until very smooth and creamy.
7. Pour mixture into the crumb crust.
8. Bake for 35 minutes.
9. (optional) Add food coloring to sour cream and mix well.
10. Remove from oven and immediately spread sour cream over the top of the cheese filling.
11. Refrigerate at least two hours.
12. Spread blueberries on top.
13. Serve cold.
