3 c flour
2 tsp soda
1/2 tsp salt
1 c vegetable oil
2 cups shredded zucchini
1 (8oz) can crushed pineapple (well drained)
1 1/2 tsp cinnamon
3/4 c chopped nuts
3 eggs
2 c sugar
2 tsp vanilla

Directions:
Directions:
Combine flour, soda, salt, baking powder, cinnamon and nuts. Set aside. Beat eggs slightly, add sugar, oil and vanilla, beat until creamy. Stir in zucchini and pineapple, add dry ingredients. Pour into 2 well greased and floured loaf pans. Bake at 350º for 1 hour. Cool 10 minutes in pan.
