1-2 lb. chuck roast or pot roast
2 Tbsp. parsley
1 large can tomatoes, diced
1 onion, sliced
1 small bag of baby carrots, diced
1/4 head cabbage, sliced
2 to 3 stalks of celery, diced
2 to 3 small turnips, peeled and diced
noodles
water
salt & pepper

Directions:

Cover meat with water. Add salt & pepper and parsley. Simmer ~ 45 minutes until tender. Remove meat from pan and cover with foil. Add tomatoes, onions, carrots, cabbage, celery and turnips to pot and simmer. Trim fat from meat, cut into chunks and add back to stock. Simmer until vegetable are tender. In a separate pot, cook, drain and rinse noodles before adding to soup bowl.
