Greek Potatoes Recipe

8 large potatoes, peeled and cut into wedges (6-7 wedges per potato)
4 garlic cloves, minced (more garlic is a good thing; less garlic is a "no-no" for this recipe.
1/2 c. olive oil
1 c. water
One chicken bouillon cube *(if desired. If using, comb. with water first.)
1 tsp. dried oregano (use Mediterranean if you have it)
1-1 1/2 lemons, juiced
Sea salt
Fresh coarsely ground black paper
* Cut back on the salt if using

Preheat oven to 425º
1. Spray large baking pan with PAM (or something similar)
2. Put all ingredients in a large pan big enough to hold the potatoes.
3. Season generously with sea salt and pepper
4. Give everything a few tosses with your hands to season well.
5. Bake 40 minutes.
6. When a nice golden-brown crust has formed, give them a stir to bring the white underside up. Season lightly with a bit more sea salt and pepper to brown other side.
7. Add 1/2 c. more water if pan appears to be getting dry.
8. Cook another 40 minutes.
