3 Eggs
1 C. Vegetable Oil
2 C. Sugar
1 tsp. Vanilla Extract
2 C. Flour
2 tsp. ground Cinnamon
1 tsp, Baking Soda
1/2 tsp. Salt
1 C. chopped Walnuts (or Pecans)
5 C. Peeled and Sliced Apples
Frosting:
8 oz. Cream Cheese, softened
2 tsp. Vanilla Extract
1 Tbsp. Lemon Juice
4 Tbsp. Melted Butter
2 C. Powdered Sugar

Directions:
Directions:
Preheat oven to 350º
Cake:
Beat eggs and oil together until thick. Add sugar, vanilla, flour, cinnamon, soda, salt and walnuts; blend thoroughly.
Place sliced apples on the bottom of a greased 9" X 13" pan. Drop batter over apples. Bake for 1 hour. Cool cake.
Frosting:
Combine cream cheese, vanilla, lemon juice and butter until well blended. Beat in powdered sugar until smooth.
Frost cake with frosting when cooled.
