4 large sweet potatoes
2 c sugar
2 sticks butter
1 tbsp nutmeg
1 tbsp cinnamon
1 can evaporated milk (carnation milk)
4 eggs
1 tbsp vanilla

Directions:
Directions:
Boil sweet potatoes whole in skin for 40 to 50 minutes or until done. Run warm water over the sweet potatoes and remove skin. Break apart warm sweet potatoes into mixing bowl. Add butter and mix well. Mix in sugar, milk, eggs, nutmeg, cinnamon and vanilla. Beat on medium speed until mixture is smooth. Taste to ensure mixture is to your liking. Pour filling into unbaked pie crust. Bake at 350º for 55 to 60 minutes or until knife in center comes out clean. Pie will puff up like a souffle and then sink as it cools.
