10-12 Red Potatoes boiled, peeled, sliced
4-5 Celery Stalks cubed
3/4 lb. Bacon cut into cubes & then saute
2 T. Flour
1/2 c. White Vinegar
1/4 c. Water
1 c. Sugar
1/4-1/2 c. Sweet Pickle Juice
Salt & Pepper to taste

-Boil, cool, peel, & slice 1/4 inch slices of Potatoes.
-Place Potatoes in a large bowl & add celery, salt, & pepper
-Fry Bacon slowly until crisp. Half way thru cooking bacon, add the onions to the bacon and finish cooking.
-Add flour to the bacon & stir until all of the flour dissolves.
-Now add the Vinegar to the bacon mixture & stir.
-Add water to the bacon mixture & stir.
-Add the sugar to the bacon mixture & stir.
-Lastly add the Pickle Juice to the bacon mixture and stir.
-Pour the Bacon Dressing mixture over the Potatoes & serve at room or a warm temperature.

This recipe tastes best when prepared at least 3-4 hours ahead of time so that all of the dressing has time to be absorbed into the Potatoes. It actually will always taste best the following day after it is made. If refrigerate the potato salad overnight, you will need to re-warm it, as this is a dish to be served room temperature or slightly warmed.
