1 1/2 to 2 pounds boneless, skinless chicken breasts or thighs
1/2 medium Onion, chopped
2 Medium Potatoes, peeled and diced
2 cans Mixed Vegetables, drained
2 cans Cream of Chicken Soup
1 cup Milk
1 cup Chicken broth

Topping:
2 cups Bisquick or any baking mix
3/4 cup Milk

Directions:
Directions:
Simmer chicken in small amount of water.until no longer pink. Reserve 1 cup water and drain. Add onion and potatoes in a saucepan of water and cook until tender. Drain. Add Mixed Vegetables, cans of Cream of Chicken Soup, chicken broth and milk. Heat until warm.
Put mixture in greased 9 x 13 baking dish and Bake in 350 degree oven for 15 minutes or until hot and bubbling.
While vegetable mixture is getting hot, Mix baking mix with milk and roll dough out to 1/2 inch thickness on well floured ( I use more baking mix!) board. With a sharp knife, cut dough into squares.
When vegetable mix is hot, lay dough on top of mixture and bake for another 15 minutes or until dough is golden brown. Serve immediately.

This is such a quick and easy recipe! You can also use refrigerated biscuits but I like the fluffiness of the Bisquick Baking Mix. This makes wonderful leftovers also.
