1 c. butter, softened
3/4 c. packed brown sugar
1 egg, separated
2 c. all-purpose flour
1-1/2 to 2 cups finely chopped pecans

Directions:
Directions:
Cream butter, brown sugar, and egg yolk. Gradually add flour. Roll into 1 inch balls. In a small bowl, beat egg whites. Dip balls in egg white and then roll in pecans. Place 2 inches apart on ungreased cookie sheet, flatten slightly.

Bake at 375º for 8-12 minutes or until edges are lightly browned. Remove to wire racks to cool.

(I was blessed with two Scandinavian grandmothers: Augusta (Strand) Bakken and Anna (Deline) Edson. They had many buttery cookie recipes. The Strand Bakery was among the first bakeries in Minneapolis, MN. Sorry grandmothers, if you are looking down, I didn't enter a Lutefisk recipe.)
