Ingredients:
Ingredients:
2 lbs of sausage (bulk, farmers or Jimmy Dean)
2 loaves of bread ( I use herb slab and sourdough, but in the old days it was day old hamburger or hotdog buns...however I like a heartier loaf.)
Atleast 6 eggs, usually I add several more egg whites
1/2 c. orange juice (more if the mixture is too dry)
Herbs: fresh or dried, oregano, parsley, basil and my secret speciality, mint
Freshly ground black pepper

Directions:
Directions:
Fry sausage and let cool.
Grate bread.
Mix everything together in a really large bowl. Add more egg whites and/or orange juice or water to make consistency moist but not soggy.

Grease a deep vessel that can be baked. Bake one hour in 350 F oven.
You can also make this in the crock pot and let slow cook for several hours.
You could also make this a day before and heat up before serving.

Sorry if the measurements are not correct, this is one of those recipes passed down thru the generations with hand and eye measurements.
