1/3 C whole calamata olives, rinsed & cut in half
1/3 C yellow banana pepper rings/mild, drained & cut in half
6 plum tomatoes, seeded & chopped
8 oz. uncooked thin spaghetti
1/3 C bottled Greek salad dressing
2-3 lemon wedges
1/2 C feta cheese, crumbled
Fresh cracked pepper

Directions:

1. In a plastic container (lined with a paper towel) combine: olives, pepper rings, & tomatoes. Cover & chill (min.1 hour).

2. Cook pasta according to package directions. Drain & transfer to serving plate(s).

3. Immediately top the pasta with chilled vegetables & salad dressing. Squeeze lemon wedges over pasta. Top with feta cheese & fresh cracked pepper.

Note…NO additional salt is needed because of the usual sodium amounts in olives & feta cheese.

For a heathiet version, use spaghetti squash.
The hot & cold contrast is refreshing with lemon splash!
