2 lbs. Chicken breasts, boneless/skinless
3 (15.8 oz.) cans Great Northern beans
1 T olive oil
4 garlic cloves, minced
2 medium onions – chopped
2 t ground cumin
1/4 t ground cloves
1/4 t cayenne pepper
1 t ground oregano
2-4 oz. cans chopped green chilies
4 C chicken stock, canned
20 oz. Monterey Jack cheese

Directions:

1. Boil chicken till tender, dice into 1/2” cubes. (Save chicken broth for another recipe.)

2. In a chili pot, add onions to heated oil…cook until clear.

3. Stir in garlic, chilies, cumin, cayenne, oregano, and cloves. Sauté 2-3 minutes.

4. Add chicken, beans, stock, and 12 oz. cheese

5. Let simmer 15 minutes.

6. Serving suggestions: top w/cheese, sour cream, and/or salsa.
