2 T flour
1/2 t salt
1/4 t freshly ground black pepper
4 chicken breast halves,skinless/boneless (about 1 lb.)
1/2 lemon (thinly sliced), plus 1/4 C fresh lemon juice
1/3 C dry white wine
1/4 C reduced-sodium chicken broth
1 T olive oil
2 cloves garlic, minced
4 t capers, rinsed/drained
2 T chopped fresh parsley
1/2 lb. mushrooms, halved
1 C cooked orzo

Directions:

1. In a large pot of boiling water, cook orzo until just tender. Drain well.

2. Combine flour & salt/pepper. Dredge chicken in flour mix, shake off excess.

3. In a jar with tight-fitting lid, combine: lemon juice, wine, broth, & reserved flour mixture...shake until smooth.

4. In a large non-stick skillet, heat oil until hot, but not smoking over medium heat. Add chicken & cook until lightly browned, about 2 minutes per side. Add garlic & mushrooms; cook/stirring frequently until mushrooms are slightly softened, about 2 minutes.

5. Shake lemon juice mixture & add to pan, stirring to combine. Bring to a boil, reduce to a simmer, & cook until chicken is cooked through, about 5 minutes. Add lemon slices & cook for 1 minute.

6. Divide orzo among 4 plates. Place chicken breasts on top of orzo & top with mushroom/wine sauce. Sprinkle with capers & parsley. Serve with rice or noodles.
