3 pounds red potatoes
1 egg
2 stalks celery (finely diced)
1 1/2 cup mayonaise
2 tbsp. vegetable oil
2 tbsp. parsley
salt and pepper to taste

Directions:
Directions:
Boil potatoes and egg approximately 15 minutes or until fork tender. Set aside to cool. Peel potatoes and egg and slice 1/2 inch pieces into large mixing bowl. Add celery. Drizzle with vegetable oil. Add mayonaise, parsley and salt and pepper to taste. Mix well.
