2 1/2 C flour
1/4 tsp baking soda
1/4 tsp. salt
1 c butter, room temp
3/4 c powdered sugar
1 large egg
1 tsp vanilla extract.

Directions:
Directions:
Preheat oven to 350º.
In a large bowl, whisk together flour, soda and salt; set aside.

Using electric mixer, beat the butter and sugar till smooth; add egg and beat until fluffy, about 2 minutes. Beat in vanilla.

With mixer on low, slowly add flour mixture, , mixing until just incorporated. Shape into either a disc or a 'log', depending on what you want to do with it.

If you shape it into a disc, you can roll it out and use a cookie cutter to shape; if you make a log, you can slice and make little round cookies.

Bake on parchment lined cookie sheet approximately 12-15 minutes, or until edges begin to brown. Cool on wire racks. Decorate with colored sugar and/or icing, as desired.
