2 lbs. Jimmy Dean sausage links
1 (4-5 lb.) hen, boiled and deboned
2 pkgs. Louisiana gumbo mix
1 tsp. garlic powder
1 tsp. onion powder
1 lg. onion, chopped
2 stalks celery, chopped
1/2 pkg. chef's seasoning
1 can original rotel diced tomatoes
1 lb. pkg. cut okra

Cut sausage in bite size pieces and fry until done or lightly brown. Set aside. Sauté okra in small amount of oil until its not slimmy any more. Set aside. In large heavy sauce pan, follow direction on gumbo mix, and add chef's seasoning, onions, celery and rotel tomatoes. Cook until it comes to a boil. Add 1 to 2 teasponns of garlic powder, 2 teaspoons onion powder, salt and pepper to taste. Add chicken, sausage and okra and cook for 1-1/2 hours. Taste, you may need to add more garlic, onion powder, salt or pepper. A husband makes a good taster. The longer it cooks, the better it tastes. Serve over rice. You can also use shrimp, crawfish or crab instead if chicken and sausage, or you can use sausage with seafood.
