1/2 cup unsalted butter
1/2 cup granulated sugar
1/2 cup firmly packed dark brown sugar
1 large egg, lightly beaten
1 tsp. vanilla extract
3/4 cup all-purpose flour
1/4 tsp. baking soda
1/4 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/4 tsp. salt
1 1/2 cups old-fashioned rolled oats
1/2 cup chopped walnuts
1/2 cup dried cherries

Directions:

Preheat the oven to 325º.
Cover baking sheets with parchment paper.
Melt butter in a sauce pan over low heat.
Remove melted butter from heat with a rubber spatula or wooden spoon and blend the melted butter with the brown and granulated sugar.
Add in the egg and the vanilla and mix until blended well.
Sift together the flour, baking soda, cinnamon, nutmeg, and salt into a bowl.
Mix the flour mixture into the butter/sugar/egg mixture.
Stir in the oats, walnuts and cherries.
Shape cookie dough into rounded tablespoon-sized balls.
Space balls two inches apart on baking sheets and flatten each ball slightly with a spatula.
Bake for 15-18 minutes (longer if a crisper cookie is desired).
Cool cookies on wire racks.
