2 3/4 cups of flour
1 3/4 cups sugar
1 tsp baking powder
1/4 tsp salt
1 1/2 tbsn anise seed
3 large eggs room temp
3 large egg yolks room temp
2 tsp vanilla
1 2/3 cups unblanced whole almonds (8 oz)

Preheat oven to 350 degrees F. Line two baking sheets with parchment paper. Combine, flour, sugar, baking powder, salt, and anise seed in bowl of electric mixer. Mix on very lo speed. In separate bowl , combine eggs, yolks and van extract and whisk lightly to break up the eggs. With the mixer on slow speed add this mixture to the dry ingredients. Then add the almonds and mix till it hold together. Divide dough into four segments. Form each into a log about 8 "long and 2 to 3 " wide and about an inch high. Place two logs on prepared sheets. Bake 10 to 15 minutes. Then switch positions of pans and bake another 8 to 10 min. until the biscotti is lightly browned and set. Remove from pans and let the biscotti rest for about 10 min. Lower the temperature to 325 degrees F. Carefully slice each log on the diagonal into 1/2 inch pieces. Place them on thier sides on the baking sheets and bke for 10 minutes. Then switch positions of pans and bake another 10 min longer.until the biscotti are very firm. Transfer the biscotti to racks to cool

This is a wonderful Italian style cookie that will keep for up to a month stored in an airtight container at room temperature.
