2 cups diced potatoes
1 cup boiling water
1 teaspoon salt
1 small onion, sliced
1/2 teaspoon pepper
2 cups sour cream
minced parsley

Directions:
Directions:
Combine first 5 ingredients and cook together 15 minutes. Add cream and cook until potatoes are tender. Serve hot. Garnish with parsley.
