1 Large Box Of Lasagna Noodles
4 Cans Of Tomato Sauce
2 Small Cans Of Tomato Paste
2 Cans of Rotel
3 to 4 Lb. Of Ground Meat (I Also Like To Use A Substitution Of Ground Pork)
Olive Oil (I Did Not Put An Amount That Is Up To You)
2 Tbsp Of Oregano
1 Tbsp Of basil
1 Large Yellow Onion
1 to 2 Tbsp Of Garlic Minced (This Is Up To You)
Salt To Taste
Cayenne Pepper Or A Mix Like Tony's To Taste
2 regular containers of cottage cheese and ricotta
2 to 3 Eggs
2 Small To Medium Bags Of Mozzarella
2 Small To Medium Bags Of Mixed Cheeses

Preheat oven to 375 degrees.
In a large pot fill at least half way and place water boiling. I like to place salt and olive oil in my water. The olive oil keeps the noodles from sticking and the salt gives the noodles flavor. Once water is boiling add in noodles. Follow packaged directions on box for how long to boil. You still want them firm.
In a large skillet put a little olive oil not much, because meat should not stick. Then place your ground meat/pork into the pot and begin browning. Once your meat is brown reduce heat to medium and add in your cut up onion and garlic. Also, you may add in your salt and other seasonings. Add half the oregano and basil to the meat mixture. Once your onions are translucent add in your drained rotel. The rotel needs to cook down for about 20 minutes. Then add in your paste and allow that to cook down for 10 minutes. Finally you can add in your tomato sauce. Add the rest of the oregano and basil. After 10 minutes taste, if you need to add more salt, seasoning, or Italian spices do so here.
Let your sauce cook for another 20 minutes. (reduce to medium low)
While your are letting your sauce cook prepare your cheese mixture. Mix in the cottage and ricotta cheese with the egg.The egg will keep this mixture firm. I also add about a half a cup of mozzarella cheese here as well. (I like a lot of cheese) Place back in refrigerator.
Once your sauce and noodles are ready you can begin assembling.
Spoon in sauce on the bottom of your oven safe baking pan. Make sure the sauce covers the entire pan.
Then place a layer of noodles usually 3 to 4 per row.
Add cheese mixture on top of noodles. Also top with mozzarella cheese.
Repeat these steps.
On the very top put the rest of your mozzarella cheese and your mixed cheeses.
Bake with a loose aluminum foil on top. Bake for 45 minutes to 1 hour. Make sure all the cheese is melted on top.
