1 dozen medium tomatoes, cut in half
1 basil leaf
2 cloves garlic, sliced
extra virgin olive oil*
salt
1/2 tsp. Anchovie paste

Directions:
Directions:
Put tomatoes and basil leaf in pot with no water and no salt. Cook on stove in pot, covered about 15 minutes or so. Saute' garlic in olive oil.* Infuse garlic by lifting frying pan and tilting it so oil goes to edge (hold over heat). Do this one or two times. Run cooked tomatoes through seed remover. Add tomato, one basil leaf and salt when oil and garlic are very hot plus 1/2 tsp. Anchovie paste. Cover with slight opening in pan and cook with fairly high heat for 10-15 minutes to reduce, or about 20-25 minutes. More salt and try a little Anchovie paste. *Always add garlic to cold oil.
