4 medium boneless/skinless chicken breast halves
Salt/pepper, to taste
2 T all-purpose flour
2 T butter
8 oz. sliced mushrooms
1 large leek, julienne cut --or-- 1/2 C sliced green onions
1/2 C beef broth
1/4 C dry sherry; or use beef broth and increase to total of 3/4 C

1. Pound chicken between 2 pieces of plastic wrap to an even thickness (1/8” to 1/4”).

2. Lightly season chicken with salt/pepper. Coat both sides with flour.

3. In a 12” skillet, cook half of the chicken in 1 T of melted butter for 4 minutes or until the chicken is no longer pink; turning once. Remove from skillet.

4. Repeat with remaining chicken & butter.

5. Add mushrooms & leeks to skillet. Stir in sherry/broth. Bring to a boil & simmer for 8-10 minutes or until liquid is reduced to a glaze consistency.

6. Return chicken to pan; heat through. Serve topped with vegetables & mushroom/leek sauce.
