3½ c. flour
1 tsp. baking powder
1½ c. butter (3 sticks),softened
1 c. sugar
2 packages of strawberry gelatin (divided,4 serving size)
1 egg
1 tsp. vanilla

Directions:
Directions:
Heat oven to 400º.
Mix flour, baking powder in a small bowl.
In another bowl, beat butter in large bowl with a electric mixer on medium until creamy.
Gradually add sugar and 1 package of the dry gelatin, beating until light and fluffy.
Add egg and vanilla. Mix well. Gradually add flour mixture, beating until well blended after each addition.
Shape dough into 1" balls, 2" apart. Flatten with glass sprinkle lightly with remaining dry gelatin.
Bake 8 to 10 minutes or until the edges are lightly brown. Cool on racks.
