3 c. flour
1 c. sugar
1 tsp. salt
2 eggs
1 c. of milk
butter

Toppings of choice such as nutella, bananas, strawberries, jam, ham and cheese...endless possibilities

Directions:
Directions:
Mix ingredients (except butter). Batter should be consistency of syrup, more fluid than regular pancakes batter. Rub butter on preheated 12 inch frypan.
Spoon 3/4 c. of batter on pan and rotate pan to coat bottom (should be thin).
After 1 minute, gently push the pancake around pan. When sides bubble, carefully flip pan. When lightly browned it is ready to slip onto plate.
Add toppings and gobble up!

Serves 4.
Kids love it because it's delicious! It's very economical, fast and filling. You can even slice the pancakes up and add them to chicken broth with scallions for a surprisingly yummy soup.
