1 Tbsp almond flavoring
1 pound of coconut
3/4 C real mash potatoes
1 lb of powdered sugar

Coating
2 Tbsp karo Syrup
2 Tbsp butter
3 Tbsp Water
1/2 bar of paraffin
1 12oz bag of chocolate chips

Directions:
Directions:
Mix Almond flavoring, coconut, mash potatoes and powdered sugar. Refrigerate for 1/2 to 1 hour. Roll into balls

In a double boiler on low to medium heat combine karo syrup, butter, water, paraffin and chocolate chips stir frequently until thoroughly melted. Using a spoon place centers in chocolate cover completely and place on wax paper to cool. Place in an airtight container and store in refrigerate.

Fresh mash potatoes are best but left over mash potatoes can be used. I have never used instant potatoes. mash potatoes should be made as if you are serving them with supper, cream or milk butter and salt.
