3 lbs daikon radish
5 tbspn of red pepper flakes
2 1/2 tbspn of pickling salt or kosher salt
7 cloves of garlic peeled and crushed.
2 tsps of grated fresh ginger
1/2cup of chives cut into one inch pieces
1 tsp sugar
1 tbspn of red pepper threads
1/2 tbspn of orean pickling salt or kosher salt

in large stainless bowl, toss cut radish with red pepperflakes and allow to sit for 30 min. Add remaining ingredientsx except the last 1/2 tbsn of salt. Place in crock or stainless bowl, sprinkle with remaining salt then cover with a plate along iwth the weight of a few pounds, such as a pot. Cover with plastic wrap and leave on the counter for two days. then refrigerate.

This is a salad that is a favorite of my daughter who came from Korea at age four. It is very pungent and spicey not to my liking but she sure loves it.
