1 pie crust
1 pkg. frozen or fresh spinach
1/2 tsp. salt
1/2 tsp. ground pepper
1 tsp. horseradish
4 tbsp. sour cream
1/2 c. grated Swiss cheese
3 tbsp. grated Parmesan
4 eggs
3/4 c. milk
3/4 c. heavy cream
2 tbsp. melted butter
1 tbsp. flour

Directions:
Directions:
Take pie crust out and poke holes in it. Cook the spinach and wring the water out of it. Mix the spinach, salt, pepper, horseradish and sour cream, Swiss and Parmesan cheeses. In a separate bowl, mix the eggs, milk, cream, melted butter, flour and a pinch of salt. Place the spinach mixture into the bottom of the pie crust. Pour the egg mixture over it. Bake at 375º for 45 minutes or until golden brown. May substitute other ingredients for spinach, such as bacon, mushrooms, crab, etc.
