For Cake:
2 c flour
2 tsp baking powder
1/4 tsp salt
2 c sugar, sifted
1/2 cup water
5 egg yolks
5 egg whites
2 tsp grated orange zest
4 tbsp orange juice
1/4 c butter, melted

For Glaze:
1 & 1/2 c confectioner's sugar, sifted
2 tsp grated orange zest
1/4 cup orange juice
1/8 tsp salt

1. Set oven rack to middle position. Preheat oven to 350º. Coat an 8 cup tube pan with cooking spray or butter. Cut a piece of parchment or wax paper to line the bottom. Coat with flour.

2. To make cake: sift together flour, baking powder and salt. Set aside

3. Beat sugar and water together, then beat in egg yolks, one at a time. Add orange zest and juice. Add sifted dry ingredients and combine until mixture is smooth. Add butter, lightly mix in.

4. Place egg whites in a bowl, beat until stiff. Fold egg whites into cake batter.

5. Pour batter into tube pan. Bake approx. 45 min or until tester inserted into cake comes clean. Cool for 20 min before removing from the pan. The cake will pull from the sides of the pan once adequately cooled. Remove from pan place inverted.

6. To make orange glaze: Mix together confectioner's sugar, orange zest orange juice and salt to a glaze consistency. Poke small holes in the top of the cake (butter knife works) to about the middle. Liberally spoon glaze over cake, allowing slight drips down the sides. Use all of the glaze - it looks like a lot, but it does soak into the cake.

7. Once glaze hardens, serve!

*You can substitute any citrus fruit for the orange. Lemon or lime works very well!
