Ingredients: 8 c. chicken broth 3 c. corn meal
2 medium onions (sliced) 3 cloves garlic (minced) 5 tbsp. oil 1 20 oz. can crushed tomatoes 1½ c. sliced olives 1/2 green bell pepper (seeded and sliced) 2 to 4 c.sliced chicken ( you can use ground beef too) 1 20 oz. can corn (drained) 2½ tbsp. chili powder 1/2 tsp. salt 1/2 tsp. pepper 1 c. grated cheddar cheese

Directions:Brown onions and garlic in oil Add tomato and pepper and simmer for 15 minutes Add corn, chicken or beef, olives, chili powder and salt to taste Simmer one hour. Add cornmeal to make it thick enough (about 1/4 cup at a time).
Boil broth and add to 2 cups of cornmeal to make mush. Line a 9 x 13 greased pan with part of the mush. Poor in meat mixture and cover with the rest of the cornmeal mush. Bake 20 to 30 minutes. Add grated cheese last 10 minutes. When cheese is golden brown remove from the oven. Let sit at least 10 to 15 minutes to rest. |

Notes: This was a little note that was on the recipe that I think was really cute." I can hear mom telling me to leave perfection alone, but I think I remember her adding crushed Frito corn chips on top. I think the recipe lends itself to modern day adjustment, like adding chopped parsley, or scallion, red pepper flakes, or some kind of chopped jalapeño peppers."
