4-5 med. potatoes peeled and cut into cubes.
beef bouillon granules
1 lg. onion
1 stick of butter
half & half
fresh parsley

Directions:
Directions:
Put potatoes in pot add enough water to cover. Add 1tsp. of beef bouillon granules per cup of water. Chop onion medium and saute in stick of butter.
When potatoes are tender do not drain add the sautéed onions to the potatoes. Mash slightly with potato masher or large fork. Add enough *half & half to desired consistency. Garish with fresh chopped parsley.

* You can use milk if you are cutting fat and calories~but it won't be as creamy.

I (Rita) found this in a cookbook that my mom and sister had put together for me when I got married. Of various family recipes I have never made this but it seems simple enough.
