4 oz baking chocolate
2/3 C shortening
4 eggs
2 C sugar
1 1/2 C flour
1 tea salt
1 tea baking powder

1 C chopped walnuts optional

Directions:
Preheat oven to 350 degrees
Grease/spray 9x13" rectangle baking pan

Melt chocolate and shortening slowly, microwave OK
Beat eggs with sugar
Slowly add cooled melted chocolate to beaten eggs mixture, mix
Mix in white powders
Should be thick batter
Stir in optional nuts

Bake 20 - 25 minutes; do not over bake
Cool a bit, slide knife around edges of pan, turn brownies out of pan to cool rest of way, cut into pieces

Note on shortening - butter tastes the best, but a great alternative is to separate the yolks from the egg whites and emulsify light olive oil with the yolks by using a hand mixer or blender. Like making mayo. Then the oil disperses evenly instead of sinking to the bottom. And is not hydrogenated like Crisco. Add the egg whites when you are supposed to add eggs.

These brownies made it to Diamond O via mail to Rod and Jim and when we went up with McGoffs. I made and froze batches in advance to have plenty.
I now love Schafenberger or any other high quality chocolate and use 5 oz.
I now lower baking powder to 1/2 teaspoon and 1 C flour for more fudgy texture.
