1Stalk of Celery ( Chopped Fine)
1 Cup of Chopped Onions
1 Stick of Butter
1/2 Cup All Purpose Flour
2 Egg Yolks
1 Tsp Salt
1/2 Tsp Red Pepper
1/4 tsp Black Pepper
1 Lb. White Crabmeat
1/2 Lb. Grated Cheddar Cheese
1 Can Evaporated Milk

Directions:
Directions:
Sauté onions and celery in butter until onions are wilted. Blend flour in well to this mixture. Pour in milk gradually stirring constantly. Add egg yolks, salt, red and black pepper. Stir and cook for five minutes. Place the crabmeat in a suitable bowl for mixing. Poor cooked sauce over the crabmeat. Blend well and then transfer into a lightly greased casserole dish and sprinkle with grated cheese. Bake at 375 degrees for 10 to 15 minutes or until light brown.
