1½ cups all-purpose flour
1 cup unsweetened shredded (desicated) coconut
1 tsp. baking soda
½ tsp. ground cinnamon
½ tsp. ground ginger
½ tsp. salt
1 cup unsalted butter, softened
1 cup firmly packed light brown sugar
⅓ cup pure maple syrup
1 large egg
1½ tsp. vanilla extract
3 cups old-fashioned rolled oats
1 cup raisins (or chocolate chips, if desired)

Directions:

1. Preheat the oven to 350°F.
2. Line two cookie sheets with parchment paper.
3. Mix the flour, coconut, baking soda, cinnamon, ginger and salt in a large bowl.
4. Beat the butter and brown sugar in a large bowl with an electric mixer on medium speed until creamy.
5. Add the maple syrup and beat until combined.
6. Beat in the egg and vanilla. With the mixer on low speed, beat in the mixed dry ingredients, followed by the oats and raisins (or chocolate chips).
7. Shape tablespoons of the dough into balls the size of walnuts.
8. Place on the prepared cookie sheets, spacing 1"(2.5 cm) apart.
9. Bake for 15 - 20 mins, rotating the sheets halfway through for even baking, until golden brown.
10. Let cool on the cookie sheets for 5 mins.
11. Transfer to racks to cool completely.

These cookies are delicious and easy to make. I have made them over ½ a dozen times for many occasions, and they are always a crowd pleaser when I take a batch to the office.
Makes about 24 cookies.
