2 Lbs Crawfish Tails
1/4 Lb Butter
1 Large Onion Chopped
4 Garlic Cloves Finely Chopped
1 Tbsp Ketchup
1 Pack Frozen Cream Style Corn (Cooked In Butter)
Or You Can Cook Your Own Maque Choux
1/2 Cup Chopped Green Onion Tops

Directions:

In a 4 qt. cast iron pot, melt butter. When butter begins to brown a little put your onions and garlic and saute about 5 minutes,lower heat, add ketchup and simmer for about 30 minutes.(until onions are cooked down the way you prefer). Now turn up heat a little and add the crawfish and let it come to a boil then lower the heat again and add the corn. Simmer for about 20 minutes. Turn 0ff heat and add onion tops. Serve on Jasmine Rice and a cole slaw.

Emory Hayes and Henry collaborated on this dish for one of the Hebert Family Reunions. They said that their team name was called Hemory and it was better than being a Hemmroid! Obviously this discussion took place after they had passed a very good time sipping their favorite beverages ie: Miller lite
